Simple Bruschetta
Ingredients
- 6-7 ripe tomatoes
- 2 cloves of garlic, minced
- 1 tablespoon extra virgin olive oil
- 1 teaspoon balsamic vinegar
- 6-8 fresh basil leaves, chopped
- Salt and freshly ground black pepper to taste
- 1 baguette (preferably Italian or French)
- 1/4 cup olive oil
Instructions
- Prepare the tomatoes by dicing them and removing excess seeds and juice.
- In a bowl, mix the tomatoes with minced garlic, olive oil, balsamic vinegar, basil, salt, and pepper.
- Slice the baguette and brush with olive oil on both sides.
- Grill or toast the bread slices until golden brown.
- Spoon the tomato mixture onto the toasted bread just before serving.
